Rice Pilaf with Prunes

If you were looking for an irresistible rice dish - this pilaf with prunes and almonds is exactly that! 
Rich, flavorful and incredibly easy to make, our pilaf with prunes will quickly become everyone’s favorite!

Ingredients:

1 cup long grain rice

2 cups vegetable broth

1 yellow onion (diced)

2 tbsp butter

1 tbsp granulated sugar

1 tbsp tomato paste

1 tap salt

1/4 tsp black pepper 

A dash of ground cloves (optional)

 1 cup chopped prunes

1/2 cup almonds (chopped)

1 tbsp butter

Directions

-Cut prunes in quarters. Place them in a bowl and cover with 4 tbsp of water. Let soak for 15 minutes.
-In a pan over medium heat, add 1 tbsp granulated sugar and stir until caramelised (about 2 to 3 minutes).
-Add onion and cook for another minute.
-Add 2 tbsp of butter, black pepper and a dash of ground cloves (optional) and stir together.
-Add rice, vegetable broth, salt and tomato paste.
-Stir everything well together.
-Bring to a boil.
-Once the mixture simmers, cover and cook for 15 to 20 minutes, until rice is tender.
-In a small saucepan, melt 1 tbsp of butter. Add chopped almonds and stir until lightly toasted. Add chopped prunes and toss everything together.
-Add roasted almond and prune mixture into the cooked rice. Stir until all ingredients are well combined.
Serve warm and enjoy!
