Prune Crumble Cookies
Quick and easy to make with only few basic ingredients every kitchen has - these prune crumble cookies with definitely end up on your favourite dessert list!
Ingredients:
1 cup /227g unsalted butter
4 tbsp granulated sugar
4 tbsp powdered sugar
1/2 tsp vanilla extract
2 2/3 cups / 335g all purpose flour
pinch of salt
1/2 cup / 100g prunes
1 tbsp water
1/4 cup / 50g melted chocolate (optional)
Directions:
In a large mixing bowl, add butter, pinch of salt, granulated sugar, powdered sugar and vanilla extract. Mix on high speed until creamy.
Add flour and mix for another minute, until combined and crumbly.
Preheat the oven to 350 F. Fill a muffin pan with liners.
Add prunes and 1 tbsp of water into a blender and blend until smooth.
Add melted chocolate into prune mixture (optional).
Press 2 tsp of dough into the bottom of each muffin liner. Add 1 tsp of prune mixture in the middle of each cookie. Sprinkle the rest of cookie dough crumbs over the top of prune mixture.
Bake for 15 to 17 minutes.
Enjoy warm or cooled down, these cookies are delicious either way!
