Mediterranean Salad with Prunes

This colourful and nutritious salad is perfect meal or side dish you can make in under 30 minutes. You can also customise it by adding toasted nuts and seeds of your choice - they all pair perfectly with prunes!

Ingredients:

1/2 cup prunes (chopped in half)

1/2 cup quinoa

1/2 cup green lentils 

1/4 cup chopped fresh parsley 

1/4 cup chopped fresh mint

1/3 cup toasted nuts and seeds of your choice (pine nuts, pecans, walnuts or sunflower seeds pair great with prunes)

1/2 red onion (diced)

1/3 cup olive oil

1 tbsp honey

Juice of 1 lemon

Sea salt to taste

 

Greek yogurt and honey to serve

Directions:

Cook quinoa and lentils according to package instructions. Let them cool down.

Toast nuts and seeds of your choice in a dry pan.

Prepare dressing by combining olive oil, juice of 1 lemon, 1 tbsp of honey and sea salt.

In a big salad bowl combine quinoa, lentils, prunes, toasted nuts and seeds. Add chopped parsley, mint and finely diced red onion.

Toss with dressing and mix until all ingredients are well combined.

Serve cold, topped with Greek yogurt and honey.
