Prunes, Goat Cheese & Gorgonzola Flatbread
The combination of sweet prunes, tangy goat cheese and sharp gorgonzola on a flatbread is absolutely delicious! It is a perfect appetiser that requires just a handful of common ingredients you probably have in the kitchen.
Ingredients:
1 cup / 225g warm water (110-120 F)
1 tbsp honey or sugar
1 packet dry yeast
3 1/4 cups / 400g all purpose flour
1/2 tsp salt
1 tbsp olive oil (for brushing)
1/2 cup prunes (chopped in half)
1/4 cup / 56g goat cheese
1/4 cup / 56g gorgonzola
Directions:
Whisk the yeast, honey/sugar and warm water together in the bowl.
Allow to sit for 5 minutes, until foamy on top.
Add the flour and salt and mix the dough together with a silicone spatula or wooden spoon.
Knead the dough for about 5 to 10 minutes.
Place the dough in a greased bowl, cover with plastic wrap or clean kitchen towel and let rise at room temperature for 45 minutes to 1 hour or until doubled in size.
Once it has risen, divide the dough in half.
Preheat oven to 475 F with sheet pan in the oven.
On a lightly floured surface, begin shaping and stretching the dough. Use floured rolling pin for the best results. Repeat with the second piece of dough.
Directions:
Transfer both pieces of dough carefully to a parchment paper. Brush the top with olive oil. Top with prunes cut in half, goat cheese and gorgonzola.
Place on the hot sheet pan and bake for about 15 minutes.
Slice flatbreads using a pizza cutter and serve warm.
