Chocolate Prune Crumble Pie
Prunes pair perfectly with chocolate and this crumble pie is the best proof!
Ingredients
Dough:
1/2 cup / 100g butter
2/3 cup / 100g granulated sugar
1 egg
3 tbsp sour cream
2 cups / 250g all purpose flour
2 tbsp cocoa powder
1 tsp baking powder
Chocolate mousse:
1 1/4 cup / 300ml milk
2/3 cups/ 100g granulated sugar
1/4 cup corn starch
1/4 cup cocoa powder
1/2 cup chocolate chips
1 3/4 cup / 400g sour cream
1 2/3 cups / 400g prunes (cut in half)
1 tbsp cinnamon
Directions
In a large mixing bowl combine flour, sugar, cocoa powder and baking powder. Grate the cold butter into the mixture. Toss with your hands until well coated. Add 1 egg and 3 tbsp sour cream into the mixture. Gently knead the dough until a cohesive mass is formed. Shape into a rectangle. Cut 1/3 of a rectangle, wrap into a plastic wrap and place in the freezer.
Wrap the larger piece of the dough in a plastic wrap and chill in the fridge while preparing chocolate mousse.
In a saucepan, combine sugar, cocoa powder, corn starch and milk. Increase heat to medium, stirring constantly. Add chocolate chips. As soon as the mixture has thickened, remove from the heat. Add sour cream and mix with mixer on low speed until all ingredients are well combined.
Preheat the oven to 340 degrees Fahrenheit.
On a lightly floured surface, roll larger dish of a pie dough into a 12 inch to 8 inch rectangle. Line a 12x8 inch baking pan with the dough.
Pour chocolate mousse over the dough. Place prunes cut in half over chocolate mousse in an even layer. Sprinkle 1 tbsp cinnamon on top.
Take the smaller disk of pie dough from the freezer. Grate frozen dough with a cheese grater . Place grated dough over the prune layer.
Bake for 50 minutes.
Let the pie cool down completely before cutting.
