Pork Ribs with Prune Sauce

This rich, easy to make prune sauce will add depth to many meat dishes but it pairs the best with pork.

Ingredients:

1 1/3 cup prunes

25.4 oz/ 750ml red wine

3 garlic cloves 

2 springs of rosemary

Ingredients:

35oz / 1kg of pork ribs

Olive oil

Salt and pepper to taste

Directions:

Chop prunes in small pieces. In a big pan, combine chopped prunes, red wine, pinch of salt and dash of pepper. Cook over medium heat until the mixture reduces to a sauce, stirring occasionally.

 

In a large skillet, heat olive oil on medium heat. Add garlic and rosemary. Fry ribs until tender and golden brown on all sides.

Brush prune sauce on the ribs. Serve hot.
