Egg and Dairy Free Prune Cake
Believe it or not, you can eat healthy and not compromise on taste! Our prunes and this vegan prune cake are the best proof! Diary free, egg free and sweetened by prunes and bananas, this cake will satisfy your sweet tooth and provide essential nutrients that your body needs.
Bonus points - this is a one-bowl cake and you don’t even need a mixer!
Ingredients:
3/4 cup / 100g chopped prunes
3 bananas
1/3 cup / 70g brown sugar
1 tbsp vanilla extract
1/2 tbsp cinnamon
2 tbsp unsweetened cocoa
2/4 cup / 100g ground walnuts
3/4 cup / 100g all purpose flour
1/2 tbsp baking powder
1 cup / 225ml sparkling water
2 small apples (peeled and sliced)
Directions:
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Add brown sugar, vanilla extract, cinnamon, cocoa and chopped prunes. Stir just until combined.
Mix in ground walnuts, all purpose flour and baking powder. Add sparkling water and whisk until smooth.
Pour the batter into the prepared pan (round 9-inch pan) lined with parchment paper.
Arrange the apple slices on top of the cake.
Bake at 375°F for 40 minutes.
Let the cake cool down completely and dust with powdered sugar before serving.
