Cinnamon Squares with Prunes
Cinnamon and chocolate are well known and beloved combination in the world of desserts but accompanied by prunes it gets even better! Our cinnamon cake with delicious prune filling in the middle, topped with chocolate ganache will make you fall in love with prunes more and more with every bite!
Ingredients:
Prune purée (filling):
2 cups chopped prunes
1/2 cup/ 100ml water
1/4 cup / 50g chocolate shavings
Cake batter:
2 2/3 cups/ 325g all purpose flour
1 1/4 cup/ 200g granulated sugar
1/2 tbsp baking soda
1 tbsp cinnamon
1 tbsp unsweetened cocoa powder
1 1/2 cup / 400ml milk
3tbsp / 50ml vegetable oil
2 tbsp honey
2 tbsp prune purée
Chocolate ganache:
2/3 cup / 150g semi sweet chocolate
1/4 cup / 60g unsalted butter
1tbsp vegetable oil
Directions:
Combine chopped prunes and water in a blender. Blend until smooth.
Preheat the oven to 350 °F.
In a medium bowl, combine flour, sugar, baking soda, cinnamon and cocoa powder. Add milk, oil, honey and 2 tbsp of prune pure. Mix on medium speed until all ingredients are well combined.
Spread half of batter in prepared pan (8x12 inch pan).
Bake for 12 to 14 minutes.
Pull out of the oven and spread prune purée evenly over the top. Top with chocolate shavings.
Pour in the rest of the cake batter.
Bake for another 20 minutes.
Allow to cool in pan for about an hour.
Microwave the chocolate for 30 seconds, then take the bowl out and give it a stir. Place the bowl back in the microwave and repeat the process until melted. Add sliced butter and vegetable oil and stir until smooth.
Pour slightly cooled ganache evenly over the top of your cake.
Leave cake in the fridge for about 15 minutes, so that ganache can set up a little.
Cut into squares and enjoy!
