      <image:title>Recipes - Prune Armagnac Ice Cream - Directions:</image:title>
<image:caption>Place chopped prunes in an airtight container and cover with 1/4 cup of Armagnac. Cover container and let chill in the refrigerator overnight. In a large bowl beat egg yolks and sugar until pale. In a big saucepan, combine milk and heavy cream and warm over low heat, stirring occasionally. Once mixture comes to a simmer, ladle half of it into the bowl with egg yolks and sugar, whisking continuously to combine. Once all ingredients are well incorporated, return it to the pan with the remaining milk and heavy cream. Continue cooking over low heat, stirring constantly. Custard should be warm to touch, but not hot (ideal temperature is between 175 and 185 degrees Fahrenheit). Once thickened, remove from the heat and pour into a heatproof container. Drain prunes soaked in Armagnac and pour remaining liquor into the ice cream mixture. Let cool completely. Churn the ice cream base according to your ice cream maker instructions. Add chopped prunes and freeze for at least 4 hours before serving. If you don’t have ice cream maker,, you can use freeze and stir method to make this delicious ice cream! Place ice cream mixture in a deep stainless steel dish and freeze for 1 hour. Remove from the freezer and stir vigorously with a spatula or hand mixer. Return to the freezer. Repeat this process for 2 to 3 hours, stirring every 30 minutes.</image:caption>

      <image:title>Recipes - Prune Baklava - Directions:</image:title>
<image:caption>Phyllo dough: Combine all ingredients in a big bowl and knead into a smooth dough. Divide into 8 equal balls, cover with plastic wrap and let rest for 1,5 to 2 hours. In the meantime prepare let’s prepare syrup and prune filling! Combine 2 1/2 cups prunes, 1 cup water, 2 tbsp sugar, 1 tsp vanilla extract and 1 tsp cinnamon in a large cooking pot. Cook over medium heat for about 10 minutes or until prunes soften. You can use hand blender to make prune mixture even smoother but that is totally optional. Syrup: Combine 3 1/3 cups water, 3 cups sugar and 2 lemon slices into a large cooking pot. Cook over medium heat for about 10 minutes until sugar melts. Syrup should be fully cooled by the time baklava is done. Once our dough is well rested, dust work surface and one dough ball with flour (or cornstarch). Roll out into a circle, about 14 inches in diameter. Repeat the process with remaining dough balls.</image:caption>

Repeat 2 more times creating a layer of 3 phyllo sheets. Sprinkle half of ground walnuts mixture, followed by half of prune mixture evenly over the phyllo. Top with 2 more phyllo sheets brushed with butter. Spread the rest of the walnuts and prune mixture evenly. Top with 3 remaining phyllo sheets brushed with butter. Using a very sharp knife, cut the baklava into 2 inch wide strips. Cut into the same width strips running diagonally to the first cuts in order to get diamond pattern. Bake at 355 degrees Fahrenheit for about 35 minutes. Right when the baklava is removed from the oven, immediately pour sugar syrup all over. Let the syrup soak into the baklava for few hours before serving. *Feel free to use store bought phyllo dough instead of making it from scratch. This prune baklava will be delicious either way!</image:caption>

<image:caption>Chop prunes and add them to the blender together with 1tbsp of rum. Blend until smooth. Transfer the mixture into a bowl and add 1/2 cup melted chocolate chip and 1/2 cup ground walnuts. Mix by hand until all ingredients are well incorporated. Use a tablespoon to scoop out enough of the mixture to form a ball. I used kitchen scale to make sure all my balls are same size. Each one of them weighs 28g/1oz. Roll out in the palms of your hands to make smooth balls. This mixture should be enough to make 18 balls. Place balls on a baking tray lined with parchment paper and let them cool down in the fridge for about 1 hour. This will make them easier to handle while decorating. After 1 hour, melt 2/3 cup chocolate chips in the microwave. Add 1 1/2 tbsp vegetable oil into melted chocolate in order to make it smoother and shinier. Dip each ball into chocolate and sprinkle with your favorite dessert decorations. Place them on the baking tray lined with parchment paper and let them cool down in the fridge for about an hour. Keep in an airtight container in the fridge for up to 4 days.</image:caption>

      <image:title>Recipes - Walnut Prune Roll - Dough:</image:title>
<image:caption>We will start by warming ½ cup/ 4.2oz / 125ml milk up. In order for yeast to activate, milk temperature should be between 110 and 120 Fahrenheit. It took me 30 seconds in microwave to reach this temperature but I encourage you to use your kitchen thermometer to check your milk temperature. Add 1 packet of instant yeast, 1oz/30g of sugar and 1oz/30g of flour into warm milk and stir it together. Let stand for about 10 minutes or until foamy. Once your yeast activated, transfer it to a bigger bowl and add remaining ingredients. Knead the dough for 5 to 10 minutes, until ingredients are evenly mixed into a uniform mass. Cover the bowl and let the dough sit for 15 minutes. Knead the dough once again for about 5 minutes. Cover the bowl and let the dough rise for 1 hour in a warm place. If your home temperature is low, turn the interior light in your oven and place the dough inside. This will create perfect temperature for the dough to rise.</image:caption>
