Butter Cookies With Prunes

Using just few basic ingredients, make these delicious butter cookies with prunes that will melt in your mouth! 

Ingredients:

1/2 cup / 120g prunes (halved)

1/2 cup / 120g walnuts or almonds (chopped)

1 1/2 cup / 188g all purpose flour

1/2 cup / 113g butter

1/2 cup / 66g sugar

2 egg yolks

1 tsp cinnamon

1 tsp vanilla extract 

Instructions:

In a large bowl, cream together butter, sugar, egg yolks and vanilla extract until fluffy.

Add flour and cinnamon and mix until combined.

Fold in prunes and chopped nuts.

Roll dough into a log, wrap in plastic and leave in the fridge for about 2 hours.

 Preheat the oven to 350 F. 

Cut into 1/2 inch thick slices, place on a baking tray lined with parchment paper.

Bake for 12 to 15 minutes or until edges are golden brown.

Let cool down completely before serving.

Keep in an airtight container.
